TWO CHEFS, ONE STORY: GUIDO PATERNOLLO AND MATTEO MAENZA IN A FOUR-HANDS DINNER AT PELLICO3

A gastronomic journey that brings together the allure of Milan and the Dolomite woods. A fine dining experience will take place at Pellico3 at Park Hyatt Milan on Wednesday 15th October from 7.30pm. Chef Guido Paternollo will be hosting a four-hands dinner alongside the Executive Chef of the Grual restaurant at Lefay Resort & SPA Dolomiti.
The event is part of the dining series 2025 Guido Invita, designed to explore the culinary art through collaboration and shared creativity. Two visions will bring a unique journey to life, born of technique, research, and personal interpretations of contemporary cuisine. A culinary duet combining Paternollo’s precise touch and Maenza’s sensitivity to the local area.
The menu starts with a selection of dishes designed to awaken the senses. Chef Paternollo’s Air Truffle and Pie Tee with lobster, coral and bergamot offers an aromatic journey from the forest to the sea. Chef Maenza continues with a tribute to the lightly revisited tradition: Carne Salada Tartlet and Herb Foam. Then come the beetroot, elder and alpine butter, which together offer a combination of plant sweetness and alpine depth.
The following seven-course tasting menu showcases creations that highlight seasonal products, such as porcini mushrooms, fish paired with root vegetables and mountain pine, chicken, hare and roe deer. The nobility of meat and fish is combined with the tradition of the vegetable garden to create a balance of strength and delicacy.
While Chef Paternollo designs his dishes with precision, creating architectures of taste with a focus on verticality and harmony, Chef Maenza becomes an ambassador of identity cuisine, rooted in tradition, nature and instinct. His menu is ‘altimetric’, offering a metaphorical journey from the valley floor up to the high mountains.
All of this takes place in the exclusive setting of Milan’s iconic Park Hyatt hotel, a landmark in Italy’s most sought-after city.
